Mashed Potatoes


Growing up, I had a cute next door neighbor named Betty.  Betty was a FABULOUS cook AND Gardner!  She spent most of her life enjoying both of these.  As I think about her massive yard and tiny kitchen, I wonder if she would have switch that around if she could have.  Us ladies LOVE our kitchen’s, except the dishes right?  In High School I was her house keeper, and she kept a tidy house.  Betty was a great neighbor and a great person to work for.  She was a great tipper too!  Since she has left this life, I’m grateful to her today for providing me with a way to purchase my Husbands wedding ring.  Betty also gave my Husband his first loan.  She obviously had a lot of trust in Him, AND my cleaning skills!  Every time I think of Betty, I will never forget smelling her lemon tree in her bathroom as I mopped her floor, her weaving loom that she always had something she was working on, and how I sure regret not getting more of Betty’s amazing recipes!  I LOVE this recipe of Betty’s for Thanksgiving!


Serves 12-15

8- large Baking Potatoes (5 lbs), peeled and boiled until tender (approx 40 min).  Drain then mash well.

With and electric mixer, beat together  8 ounces Cream Cheese (room temp) and 1 Cup Sour Cream; gradually beat in mashed potatoes until smooth.

Add 3/4 Cup of Half -and- Half

Beat in 2 Teaspoons Garlic Salt and 1/2 Teaspoon of Ground Pepper.

Pour mixture into a buttered, shallow 3- to 4-quart casserole dish.

Dot with 4 Tablespoons butter; sprinkle lightly with Paprika.
