Passing through Texas on our family vacation, we stopped at a restaurant that served up this yummy apple salad. I had mentioned to my Mom that it would be something tasty to serve for her next book club that was coming up in the Fall. We did our best to think of everything that might be in this salad as we devoured it. We came very close, BUT the candied pecans my sister-in-law suggested sent this recipe to the top of everyone’s recipe list that has tried it. Funny thing is, the next time we passed through Texas again eating at this same restaurant, it wasn’t on their menu anymore. I think THAT restaurant needed the candied pecans we added too spice up their recipe to keep it on their menu.
Golden Apple Pecan Salad
1 Large Carton Yoplait Vanilla Yogurt (no substitutes)
5 Green Apples, diced into cubes with the peel for color and texture.
5 Red Apples, diced into cubes with the peel for color and texture.
1 Cup Golden Raisins
2 Cups Candied Pecans
1 Teaspoon Cinnamon
1 Teaspoon Vanilla
3 heaping Tablespoons Brown Sugar
Lemon Juice (to keep apples from browning)
In a large bowl add cold water and lemon juice to put the diced apples in. Drain well once all of the apples have been place in the lemon water to prevent them from browning.
In a separate bowl pour in the Yogurt , Cinnamon, Vanilla, Brown Sugar, and mix well.
Stir in the Apples and the Golden Raisins.
Chill and add Candied Pecans right before serving.
