Golden Apple Pecan Salad

Passing through Texas on our family vacation, we stopped at a restaurant that served up this yummy apple salad.  I had mentioned to my Mom, that it would be something fun to serve for her next book club that was coming up in the Fall.  We did our best to think of everything that might be in that salad, as we devoured it!  We came very close, BUT the candied pecans my sister-in-law suggested, sent this recipe to the top of everyone’s recipe list that has tried it.  Funny thing is, the next time we passed through Texas again, eating at this same restaurant, it wasn’t on their menu anymore!  This has been a hit wherever I have shared this salad.  I think, THAT restaurant needed the candied pecans we added too spice up their recipe!
